The Bimini new menu is here: lunch at Virgin Voyages’ Beach Club at Bimini has had a Caribbean makeover. Virgin Voyages has teamed up with chef Rashida Holmes on a new menu of roti, patties, curries and tamarind-glazed skewers, rolling out across the fleet from autumn 2026. It’s included in your fare, like all the food on board.

Below is every dish on the new menu, with photos, the vegan and gluten-free options, and when each ship starts serving it. We loved lunch at Bimini on our April 2026 sailing on Resilient Lady, so we’re looking forward to trying the new menu for ourselves.

Bimini new menu at a glance

  • Who’s behind it: chef Rashida Holmes, founder of Bridgetown Roti in Los Angeles, drawing on her Barbadian and Trinidadian heritage.
  • Where: the open-air restaurant at the Beach Club at Bimini, Virgin’s Bahamas beach club on most Caribbean sailings from Miami.
  • Cost: included in your fare. Drinks with alcohol, frozen cocktails and cabanas are extra.
  • What to try first: Virgin’s own picks are the curry chicken roti, the tamarind BBQ skewers and the sweet plantains.
  • Dietary choices: five vegan dishes, three more vegetarian ones and six gluten-free choices.

When each ship serves the new menu

ShipNew Bimini menu from
Resilient Lady12 October 2026 (first ship to serve it)
Scarlet Lady25 October 2026
Brilliant Lady15 November 2026
Valiant Lady10 April 2027, when she returns to Bimini

Dates are Virgin’s rollout plan and menus can change. If your sailing is before these dates, you’ll get the previous Bimini lunch, which is still excellent (more on that below).

Where you’ll eat it: the Beach Club at Bimini

The new menu is served at the Beach Club’s open-air restaurant, a short walk from both the beach and the pool. Ships dock at the pier and a free tram takes you to the club, so you can wander over for lunch whenever you’re hungry. These are our own photos from our April 2026 sailing on Resilient Lady.

The full Bimini new menu, dish by dish

Here’s every dish, course by course, from Virgin’s onboard menu card. Tap any photo to see it larger.

Starters

Tostones (VV): guacamole, coriander, serrano pepper. Twice-fried green plantain, crisp on the outside and soft in the middle, made for scooping up the guacamole.

Little gem salad (V, GF): ginger turmeric vinaigrette, coconut everything spice. A fresh, crunchy starter, and a good choice if you’re heading back into the sun after lunch.

Grilled shrimp skewers (GF): charred pineapple chow, green herb marinade. Chow is a Trinidadian pickle of fruit, lime, garlic and pepper, so expect some heat with the sweetness.

Sides

Mac & cheese pie (V): cheddar, gouda, garlic and onion spiced butter. Baked macaroni pie is a Bajan Sunday-lunch classic, served here in proper slabs.

Pigeon peas & rice (VV, GF): green sofrito, crispy okra, masala. A Caribbean staple, topped with crispy okra for crunch.

Mains

Coconut curry channa (VV, GF): black rice, onion, Aleppo pepper. Channa is chickpea curry, a Trinidadian favourite, served here on black rice. One of the plant-based highlights.

Snapper pattie: house pepper curry, watermelon radish, spring onion. Smoked snapper with a spiced house pepper curry.

Curry chicken roti: Yukon Gold potatoes, turmeric spiced cabbage, coriander, spring onion. Roti is the dish chef Rashida Holmes named her Los Angeles restaurant after: curried chicken and potato wrapped in soft flatbread. Virgin is leading with this one.

Tamarind BBQ pork skewers: green pepper chimichurri, red pepper marinade, tortilla. Sweet and sharp tamarind glaze, with a green chimichurri to cut through it.

Desserts

Coconut rice pudding (VV, GF): pineapple, dragon fruit, papaya, lemon balm. Light, cool and tropical, topped with fresh fruit.

Sweet plantains (V): salted condensed milk, candied pecans, mint. Caramelised ripe plantain with salted condensed milk and candied pecans. Virgin lists it as one of its three must-try dishes.

Sliced watermelon (VV, GF). A simple, refreshing finish on a hot day.

(V) vegetarian · (VV) vegan · (GF) gluten free. Virgin’s kitchens aren’t allergen-free environments, so let the crew know about any allergies or dietary needs.

What’s changed from the old Bimini lunch

On our April 2026 visit on Resilient Lady, lunch was honey jerk chicken, red snapper and mango ceviche, West Indian pumpkin curry, Caribbean rice and black beans, grilled corn, crispy cassava and rum cake. It was some of the best food of the whole trip, eaten with sand between our toes.

The new menu keeps that laid-back Caribbean feel but goes deeper into Trinidadian and Bajan cooking: roti and channa in place of the jerk chicken and pumpkin curry, patties and skewers that are easy to eat by the pool, and tostones instead of cassava. Our Virgin Voyages menus page still has our photos of the previous menu board.

How lunch is served. These are our photos from April 2026, so the food in them is the previous menu, not the new one. They show how lunch works: chefs serve at open-air stations and you take your plate back to the beach or the pool. We’ll swap in photos of the new dishes after our next visit.

Is lunch included at the Beach Club at Bimini?

Yes. Lunch is included in your fare, along with water and soft drinks, as with every restaurant on board. Alcoholic drinks and frozen cocktails go on your Bar Tab (our Virgin Voyages drinks prices guide has the costs), and cabanas are an extra you book in the app. Our complete Beach Club at Bimini guide covers the beach, the pool, cabanas and how to plan the day.

New menus on board too

Bimini isn’t the only change. The Wake now has refreshed brunch and dinner menus with Michelin-starred chef Brad Farmerie, and The Dock has new Mediterranean sharing plates. You’ll find every restaurant on our Virgin Voyages menus page.
